Ginger Beer Hibiscus Mocktail

A refreshing, tropical mocktail featuring ginger beer, hibiscus syrup, lime, strawberries and passionfruit. Serves 2.

Ingredients

  • 125 g (4.4 oz) strawberries, hulled and sliced
  • 3 tbsp lime juice
  • 300 ml (1.3 cups) sparkling ginger beer
  • Ice
  • 2 tbsp hibiscus syrup
  • Juice of 1 passionfruit
  • Mint leaves
  • Lime slices for garnish

Instructions

  1. Add the strawberries and lime juice to a jug and muddle gently to release the juices.
  2. Top the mixture with the sparkling ginger beer and stir gently.
  3. Fill two glasses with ice and divide the ginger beer and strawberry mixture between them.
  4. Split the hibiscus syrup and passionfruit pulp between the glasses. Garnish with mint leaves and lime slices, then serve.
