Hello! How was your weekend? We picked out our Christmas tree and made the house a bit festive — our first time at a u-cut tree farm.





Today’s recipe comes from my Secret Recipe Club assignment this month. I chose a recipe from The Hobo Kitchen — a blog full of comforting, creative dishes. I was drawn to a grilled cheese they shared that pairs bacon and peanut butter. The idea sounded unusual, but I had to try it.
Have you ever been instantly curious about a food? I have. I remember hearing about a burger with peanut butter and wanting to try it simply because it sounded so surprising. It turned out to be delicious. This grilled cheese follows that same spirit of unexpected flavor combinations.

Ellie’s version mixes bacon and peanut butter with melty cheese. I won’t pretend it’s the healthiest sandwich — it’s definitely indulgent — so I served mine with a side salad to balance it out. The peanut butter flavor is noticeable, which delighted this peanut butter enthusiast.
The verdict? Really good. I’d make it again. I also made one for my brother-in-law; he said it was “pretty good.” The creamy peanut butter, salty bacon, and melted cheese make a surprising but tasty trio.

Peanut Butter Bacon Grilled Cheese
Ingredients
- 2 tbsp peanut butter
- 2 slices bacon, fully cooked and cut in half
- 1/2 cup grated white sharp cheddar, or your favorite melty cheese
- 2 slices bread (seedy preferred)
- butter, softened
Instructions
- Spread butter on one side of each slice of bread. Spread peanut butter on the opposite side of both slices. On one peanut-buttered slice, layer the bacon and grated cheese. Top with the second peanut-buttered slice, butter side up.
- Heat a small skillet over medium. Place the uncooked sandwich in the skillet and cook 5–6 minutes on one side, until golden brown. Flip and cook another 3–4 minutes until the second side is golden and the cheese is melted. Alternatively, use your preferred grilled-cheese method.
