My kids go wild for macaroni and cheese. They prefer homemade, but honestly they’ll eat almost any mac & cheese that’s put in front of them. It’s a staple in our house and our go-to quick supper for the kids and my husband. He’s not a big fan of plain mac & cheese, so I thought about his favorite flavors — and it hit me: buffalo wings. Why not turn a simple bowl of mac into Buffalo Chicken Macaroni and Cheese?

I usually make mac & cheese from scratch, but when I’m short on time I reach for a boxed mix. Pick the brand your family likes best. Then gather your favorite wing accompaniments — cooked chicken, hot sauce, celery, blue cheese — and you’re ready to dress up the dish.

There were no complaints the night I made this, and it didn’t take any longer than preparing a regular boxed macaroni and cheese. Dressed-up mac & cheese for the adults ready in about 15 minutes — love it!

Buffalo Chicken Macaroni and Cheese

Buffalo chicken macaroni and cheese takes your favorite mac and cheese and kicks it up with the tang and heat of Buffalo sauce for a quick, satisfying dinner.
Ingredients
- 1 box macaroni and cheese (prepared as directed)
- Blue cheese crumbles
- 1 chicken breast, grilled (leftovers or store bought)
- 1 stalk celery, chopped
- 1/4 cup Frank’s Red Hot Sauce
Instructions
- Prepare macaroni and cheese according to package instructions. While the water is coming to a boil, chop the celery and chicken.
- Roughly dice the chicken breast. Place the chicken in a microwave-safe bowl and heat for 1 minute. Add about 1/4 cup hot sauce, then heat an additional 15–30 seconds until warmed through.
- When the macaroni and cheese is ready, stir in about 1 tablespoon of blue cheese crumbles until slightly melted. Fold in the buffalo chicken, then top with chopped celery and extra blue cheese if desired.
