I’m headed home to Ohio. I’ve lived in Minnesota for five years, but Ohio will always feel like home — I grew up there and we spent ten of our sixteen years of marriage there. Now if only I could get there without that long 15-hour drive. I don’t mind driving so much as the five kids in the back complaining about it.
Everyone has tricks for keeping kids happy on road trips, but we use the method that works best for our family: drive at night. We leave after dinner so the kids are awake for a couple of hours and then sleep through most of the trip. By the time they start to wake up, we arrive. Yes, Mom and Dad are tired, but a little lost sleep is worth a quiet, peaceful drive.
If you’re planning a road trip, I wouldn’t recommend bringing these cookies — they’re messy! I tried this recipe for the first time a couple of weeks ago and made them again yesterday for the fourth time. They’re so easy and so cute. They can be eaten without refrigeration, but I prefer them cold. To me they taste a lot like uncooked cookie dough, which is almost better than the baked cookie!

These no-bake cookie balls are little bites of bliss: oats, chocolate and peanut butter mixed and rolled into powdered sugar. They’re quick to make and perfect for a snack or a simple dessert.
Yield: 18 cookies 1x
Ingredients
- 2 cups whole oats
- 3/4 cup white sugar
- 3 tablespoons cocoa powder
- 1 tablespoon water
- 1/2 teaspoon vanilla
- 1/2 cup butter, softened
- 2 tablespoons peanut butter
- 1 cup powdered sugar (for coating)
Instructions

In a medium bowl, mix the oats, sugar and cocoa powder. Add the water, vanilla, softened butter and peanut butter. Use clean hands to combine everything thoroughly until the fat is evenly distributed and the mixture holds together.

Take a small handful of mixture, press it firmly in your palm, and roll it into a ball about 1 inch in diameter. Roll each ball in powdered sugar until well coated. Chill the cookie balls in the refrigerator for at least 20 minutes before serving so they firm up.
