Strawberry Mint Vodka Lemonade Cocktail Recipe

A refreshing, homemade boozy mint strawberry lemonade bursting with bright flavor and the playful addition of gin.

I enjoy cooking and sometimes like to experiment with cocktails. The most popular recipe on this site remains Apple Pie on the Rocks, made with cinnamon whisky, but this Boozy Mint Strawberry Lemonade is the perfect springtime sipper.

This recipe began at a birthday gathering where we had an abundance of ripe Meyer lemons but no light-colored sweetener. We substituted coconut nectar, which is quite dark, and ended up with lemonade that looked an unappealing murky tan. To brighten it up and add flavor, we pureed fresh strawberries and — in the name of helping the blender — added a splash of gin to the berries. The strawberries transformed the color and flavor beautifully.

We combined the strawberry puree with the lemonade, added a handful of mint, and after the first sip everyone fell in love. It was the ideal drink for a dessert-rich garden party and is easy to scale for a crowd.

If you prefer a non-alcoholic version, simply omit the gin and add a little extra water to balance the lemon’s tartness. This recipe highlights whole ingredients rather than store-bought mixes. You can also experiment with basil in place of mint for a delicious variation.

Ingredients

  • 4 medium Meyer lemons, peeled
  • 1 cup + 2 cups water, divided
  • 2 cups chopped strawberries
  • 1 cup gin (optional)
  • 2–3 tablespoons agave nectar, to taste
  • 1/8 teaspoon sea salt
  • A handful of mint stems with leaves attached, plus extra for garnish
  • Optional: Lemon slices for garnish
  • Optional for sweeter mix: Stevia to taste

Instructions

  1. Place peeled lemons in a blender with 1 cup of water and puree until mostly smooth. Strain the mixture through a fine mesh sieve or cheesecloth into a large jar or pitcher, pressing to extract all the juice. Add the remaining 2 cups of water to the lemon juice.
  2. In the blender, combine the chopped strawberries, gin (if using), agave nectar and sea salt. Puree until completely smooth. Pour the strawberry mixture into the jar with the lemon juice without straining so the puree adds body and color. Taste and adjust sweetness as needed. Add the mint stems to the jar and chill in the refrigerator until ready to serve, or pour over ice in a drink dispenser.
