These patties are straightforward to prepare. Mash the black beans in a mixing bowl, then add the grated sweet potato, sliced onion, chopped chilli, chopped coriander, crushed garlic and seasoning. Stir in the beaten egg, then add the cornmeal or flour and mix until the mixture holds together.

  • 120 g black beans
  • 2 garlic cloves
  • 1 sweet potato grated
  • 1 onion sliced
  • teaspoon cumin
  • Pinch salt
  • Pinch black pepper
  • 2 tablespoon coriander leaves roughly chopped
  • 1 chilli pepper finely sliced
  • 1 egg beaten
  • 2 tablespoon yellow cornmeal (polenta) or plain flour

Instructions

 

  • Put the black beans in a mixing bowl and mash with a fork.
  • Add the sweet potato, onion, chillies, coriander, garlic and seasonings. Add the beaten egg and mix well. Stir in the cornmeal or flour until combined.
  • Heat a frying pan with a little oil. When hot, spoon tablespoons of the mixture into the pan and press down to form flat, round patties.
  • Cook for about 8 minutes on each side, until golden and cooked through. Serve with salad or in buns.
