Grilled Pesto Bread with Burrata and Roasted Tomatoes

Bread, cheese, tomatoes, and pesto — a classic combination that’s hard to beat. This simple recipe takes about 10 minutes to prepare and 8–10 minutes to cook. If you’re short on time, use store-bought pesto instead of making it from scratch. It’s lovely cooked on the grill, but you can also finish it under the oven broiler by placing the bread directly on a rack. Try it and enjoy!

Grilled Bread with Pesto, Burrata and Tomatoes

Ingredients 

  • 1 cup cherry tomatoes halved
  • 2 tsp olive oil
  • salt
  • 2 cups basil packed
  • 2 cloves garlic
  • 1/4 cup parmesan cheese
  • 1/2 cup olive oil (for pesto)
  • 1 loaf crusty bread such as ciabatta, halved lengthwise
  • 4 oz burrata sliced

Instructions 

  • Combine the halved cherry tomatoes with 2 teaspoons of olive oil and a pinch of salt in a bowl. Toss gently and set aside to marinate while you prepare the rest.
  • To make the pesto, place the basil and garlic in a food processor and pulse until finely chopped. Add the parmesan, then with the processor running slowly drizzle in 1/2 cup olive oil until the mixture is smooth. Season to taste with salt and set aside.
  • Preheat the grill to medium.
  • Brush the cut sides of the bread with a little olive oil.
  • Place the bread cut-side down on the grill and cook 2–3 minutes, until pronounced grill marks appear.
  • Flip the bread. Spread the pesto over the top, then add sliced burrata and the marinated tomatoes. Grill for about 1 minute, then turn the grill off and close the lid. Let the bread sit 4–5 minutes until the cheese softens slightly. Slice and serve warm.
