Bacon Herb Cheese Bread

Fleischmann’s yeast has been a trusted brand since 1868, and it’s my go-to for from-scratch baking. I tried a quick Bacon, Herb & Cheese Bread recipe from the Fleischmann’s Bread World site and found it fast and easy. The dough mixes in one bowl, the rise time is short, and it bakes into a cheesy, herb-scented sheet of bread ideal for serving as strips, squares, or sandwich slices.

Gather your ingredients and a mixer or a large bowl with an electric mixer.

Start by mixing 1½ cups of flour with undissolved yeast, Italian herb seasoning, salt, and chopped garlic.
Warm the water and olive oil until very warm.

Gradually add the warm water and oil to the flour mixture and beat 2 minutes on medium, scraping the bowl once.

Add the eggs and 1 cup of flour, mix until combined, then beat 2 minutes on high. Stir in 1 cup of shredded cheese, then the remaining flour to form a stiff batter.
Spread the batter in a greased 15 x 10-inch jelly roll pan or rimmed baking sheet with at least 1-inch sides. Sprinkle with remaining cheese and top with coarsely chopped cooked bacon.
Cover and let rise in a warm, draft-free place until puffy, about 30 minutes. Bake in a preheated 375°F oven for 25–30 minutes, or until done. If the cheese starts to overbrown, loosely cover the bread with foil for the last 5–10 minutes of baking. Remove from pan and cool on a wire rack. Serve as strips or squares, or slice for sandwiches.

This easy cheesy bread is perfect for game day or any time you want a homemade, savory snack packed with herbs, cheese and bacon.
Ingredients
- 4½ cups King Arthur Unbleached All-Purpose Flour
- 2 envelopes Fleischmann’s RapidRise Yeast
- 2 teaspoons Italian herb seasoning (or Spice Islands Herb Seasoning)
- 1½ teaspoons salt
- 2 cloves garlic, minced (or 2 teaspoons)
- 1¼ cups water
- ¼ cup olive oil
- 2 eggs, room temperature
- 8 ounces shredded cheese blend (cheddar-jack, cheddar, mozzarella), divided
- 10 slices cooked bacon, coarsely chopped
Instructions
- Combine 1½ cups flour, undissolved yeast, herb seasoning, salt and garlic in a large mixer bowl.
- Heat water and oil until very warm (120°–130°F). Gradually add to the flour mixture. Beat 2 minutes at medium speed, scraping the bowl occasionally.
- Add eggs and 1 cup flour; beat 2 minutes at high speed. Stir in 1 cup cheese and the remaining flour to make a stiff batter.
- Spread batter on a greased 15 x 10-inch jelly roll pan or rimmed baking sheet. Sprinkle with remaining cheese and top with bacon.
- Cover and let rise in a warm, draft-free place until puffy, about 30 minutes.
- Bake at 375°F for 25–30 minutes or until done. If cheese overbrowns, loosely cover with foil for the last 5–10 minutes. Remove from pan and cool on a wire rack. Serve as strips, squares, or slices for sandwiches.
Recipe Expert Tips
Topping variations: replace bacon with thinly sliced salami, hot pepper flakes, thinly sliced onion, or red/green pepper for different flavors.
