Winter is here and the holidays are around the corner. This festive Winter Wonderland Cake is a delightful addition to any celebration — guests will be wowed by its seasonal charm and whimsical details.

I planned this cake for over a year and finally brought the vision to life. It was a joy to make and turned out even more adorable than I imagined.

Warning: this cake has several components — layers, frosting, drip, snowmen and trees — so it can take time to prepare. The good news is most elements can be made ahead, making assembly quick and stress-free on the day you plan to serve it.

Below is a breakdown of the cake’s main elements and helpful tips to recreate it.

Fluffy Vanilla Cake Layers

The interior is a classic from-scratch vanilla cake. I adapted this from a trusted cupcake recipe and used the creaming method: beat butter and sugar until light and fluffy, add eggs one at a time, then alternate dry ingredients with buttermilk. This yields tender, airy layers. Important: add dry ingredients and buttermilk in alternating additions (start and end with dry) to avoid overmixing or separating the batter.

Follow the recipe steps carefully and you’ll end up with beautifully tender layers ready for stacking and filling.

Wintery Blue and White Frosting

I used a silky vanilla buttercream for frosting. To get the wintery ombré effect, tint most of the frosting with a pale sky-blue gel coloring but leave some streaks of white by not fully mixing the color in — this creates a soft, snowy look when smoothed on the cake.

Sugary Snow Glaze

The snow or icicle drip is a simple powdered-sugar glaze made with powdered sugar and a little milk. If you prefer thicker, more textured snow that holds shape, warm marshmallow fluff until pourable and use that instead for a heavier, glossy snow effect.

Marshmallow Snowmen

No winter scene is complete without snowmen. These are quick and fun to make from marshmallows on lollipop sticks. Stack three marshmallows per stick, secure a tiny hat (a mini candy cup on a chocolate coin glued with royal icing), and use gel food coloring on a toothpick to dot eyes, mouths and buttons. A thin strip of pull-apart Twizzler makes a cute scarf.

Tip: if the hat slips while drying, stand the snowman upside down to let the hat adhere securely.

Sugar Cone Christmas Trees

The sugar cone trees are one of my favorite details. Use ice-cream cones as bases and pipe star-shaped dollops of frosting from bottom to top with a small star tip to create tree texture. I used white and blue frosting for a winter palette, but green works equally well. Roll one cone in sparkling sugar for a frosted look and finish with sprinkles or sugar pearls.

For added sparkle, decorate the cake top with white nonpareils, sanding sugar, snowflake sprinkles and edible pearls. I also covered the cake base with shredded coconut and lined it with blue and white pearl gumballs for a snowy presentation — optional but festive.

Once assembled, place the cone trees and snowmen on the cake, dust everything lightly with powdered sugar for a snowfall effect, and arrange shredded coconut and candies around the base to complete the Winter Wonderland scene.

Winter Wonderland Cake

A three-layer 8-inch cake decorated with blue and white buttercream, marshmallow snowmen and sugar cone trees.

Ingredients

Vanilla Cake Layers

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cups unsalted butter, room temperature
  • 2¼ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1½ cups buttermilk, room temperature

Marshmallow Snowmen

  • Regular marshmallows
  • Wooden skewers or lollipop sticks
  • Royal icing
  • Mini candy cups and chocolate coins (for hats)
  • Black and orange gel food coloring
  • Pull-apart Twizzlers (for scarves)

Christmas Trees

  • Large and small ice-cream sugar cones
  • 3 cups vanilla frosting (or more if needed)
  • White and blue sanding sugar, snowflake sprinkles, nonpareils, sugar pearls

Vanilla Buttercream

  • 1 cup unsalted butter, slightly softened
  • 1 cup hi-ratio shortening
  • ⅛ tsp salt
  • 8 cups powdered sugar, sifted
  • ½ cup heavy whipping cream
  • 1 tbsp vanilla extract
  • ½ tsp almond extract
  • Sky blue gel food coloring

Snow Drip & Finishing

  • 2 cups powdered sugar
  • 2–3 tbsp milk
  • White sanding sugar and sparkling sugar
  • Shredded coconut and blue/white pearl candies for the base

Instructions

Vanilla Cake Layers

  1. Preheat oven to 350°F (177°C). Prepare three 8×2-inch round cake pans with parchment and grease sides.
  2. Sift flour, baking powder, baking soda and salt; whisk to combine.
  3. Beat butter and sugar in a stand mixer with a paddle attachment on medium until light and fluffy, about 3–4 minutes.
  4. Lower speed to medium-low and add eggs one at a time, scraping the bowl as needed. Mix in vanilla.
  5. Alternately add dry ingredients (in thirds) and buttermilk (in two additions), beginning and ending with dry. Beat each addition just until combined, then increase speed briefly until smooth.
  6. Divide batter evenly between pans (just over 2 cups per pan). Bake 25–30 minutes or until a toothpick comes out clean and the cake springs back when touched.
  7. Cool in pans 10 minutes, then transfer to racks to cool completely.

Marshmallow Snowmen

  1. Thread three marshmallows onto a wooden skewer or lollipop stick.
  2. Use royal icing to attach a mini candy cup to a chocolate coin to form a hat, then glue the hat to the marshmallow head.
  3. Use a toothpick dipped in black gel to dot eyes and a mouth; use orange gel for a carrot nose.
  4. Press colored dots into the body for buttons, and wrap a thin strip of pull-apart Twizzler around the neck as a scarf.
  5. Stand snowmen in a tall glass while they dry.

Christmas Trees

  1. Spread frosting over each cone and roll one in sparkling sugar for a frosted effect; set aside.
  2. Fill piping bags with white frosting and blue-tinted frosting, each fitted with a small star tip.
  3. Pipe stars around each cone from bottom to top, leaving the tip clear so you can place the tree on the cake without smudging the decoration.
  4. Decorate trees with sprinkles, nonpareils, sanding sugar and pearls.

Vanilla Buttercream

  1. Beat butter, shortening and salt on medium until light and fluffy (5–6 minutes).
  2. On low, add half the powdered sugar one cup at a time. Add heavy cream, vanilla and almond extract and beat to combine.
  3. Add remaining powdered sugar one cup at a time on low. Increase speed and whip until light and fluffy, about 5–7 minutes.

Snow Drip

  1. Mix powdered sugar with milk until smooth. Adjust consistency so it drips slowly from the cake edge.

Assembly

  1. Place one cake layer on a turntable and spread about 1 cup frosting. Repeat with remaining layers, placing the final layer upside down for a flat top.
  2. Apply a thin crumb coat of vanilla buttercream and chill for 30 minutes. Tint remaining frosting pale blue, leaving some white streaks by not fully blending the color.
  3. Frost the cake with the blue-and-white buttercream. Smooth sides with a bench scraper and top/edges with an offset spatula.
  4. Pipe or spoon the white snow glaze to drip over the edges and fill the center. Spread to cover the top and sprinkle with sanding sugar, sparkling sugar and nonpareils.
  5. Place the sugar-cone trees on the cake, finishing each tip with a small piped star and a pearl. Insert marshmallow snowmen into the top of the cake.
  6. Dust the cake, trees and snowmen with powdered sugar for a snowfall effect.
  7. Optionally, cover the cake stand with shredded coconut as snow and arrange blue and white pearl candies around the bottom for presentation.

Notes

  • Make cake layers a few days ahead: wrap tightly in plastic and freeze.
  • Marshmallow snowmen and cone trees can be made a day ahead and stored in an airtight container at room temperature.
  • If a snowman hat won’t stay on, balance the snowman upside down while it dries for better adhesion.
  • You can double the frosting recipe if you prefer extra to pipe decorations; store leftovers tightly covered.
