Rainbow Swiss Chard Tart
This tart celebrates spring and summer produce with tender, wilted Swiss chard layered over a buttery puff pastry crust. It’s fresh enough for a light lunch and elegant enough for entertaining. The combination of ricotta, Gruyère, and Swiss cheese lends creaminess and depth to every bite.
Swiss chard is rich in vitamins, minerals, and antioxidants, making this tart not only delicious but also a nutritious addition to your meal plan.
What is a Tart?
A tart is a baked dish with an open top and a defined crust. While tarts can be sweet or savory, this recipe uses puff pastry to create a flaky, buttery base that contrasts nicely with the tender vegetable filling.
This version features Bright Lights® rainbow Swiss chard from Salad Savoy. The colorful stems add visual appeal and deliver the same leafy nutrition and flavor as classic Swiss chard.
What Does Swiss Chard Taste Like?
Swiss chard has a mild bitterness that softens when cooked and blends well with other ingredients. Its texture resembles spinach: tender and slightly silky when wilted.

How to Store Leftovers
Store leftover tart in an airtight container in the refrigerator for up to four days. Reheat gently in the oven or microwave, or enjoy slices cold. The tart reheats well, making it convenient for meal prep.
Can the Tart Be Frozen?
Yes. Once fully cooled, wrap the tart tightly or place it in a freezer-safe container and freeze for up to three months. To serve, thaw at room temperature for about an hour or reheat in the oven until warmed through.
Can I Use Other Cheeses?
The recipe calls for ricotta, Gruyère, and Swiss cheese, but you can substitute or add cheeses to suit your taste. Parmesan, cheddar, or goat cheese all work well and will change the flavor profile slightly.
Variations
There are many ways to adapt this tart. Add a pinch of red pepper flakes for heat, or fold in caramelized onions or sautéed mushrooms for extra richness. You can omit one or more cheeses or try different vegetables—zucchini, roasted peppers, or spinach are all great options.

Ingredients
- 2 tablespoons olive oil
- 1 large sweet or white onion, chopped
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 2 bunches Bright Lights® (chop stems, ribbon leaves)
- 1 box puff pastry (2 sheets)
- 1 cup fresh ricotta
- 1 cup shredded Gruyère
- 1 cup shredded Swiss cheese
- 1 egg yolk
- 1 tablespoon water
Instructions
- Heat olive oil in a large sauté pan over medium heat. Add the chopped onion and cook, stirring frequently, until translucent, about 7 minutes. Season with a pinch of salt and pepper.
- Add the garlic and cook for 30 seconds. Add the chopped Bright Lights® stems and sauté 2–3 minutes, then stir in the ribbon leaves. Cover and cook until the leaves wilt, about 10 minutes. Drain any excess liquid.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Place both puff pastry sheets on the baking sheet, joining them to form one large rectangle. Spread a thin layer of ricotta over the dough, leaving a 2–3 inch border all around. Sprinkle the shredded Gruyère over the ricotta.
- Spread the cooked Swiss chard mixture in a thin, even layer over the cheese, then top with the shredded Swiss cheese. Fold the edges of the dough inward over the filling and pinch any tears to seal.
- Whisk the egg yolk with the water to make an egg wash, then brush it over the exposed crust.
- Bake until the crust is golden and the cheese is melted, about 20–30 minutes. Transfer the tart to a cooling rack or cutting board and let cool for 10 minutes before slicing and serving.
