Instructions

  • Combine: 1 yellow cake mix (reserve 1 cup for the topping), 2 beaten eggs, and 1/2 cup (1 stick) softened butter.
  • Mix the ingredients, then press the mixture evenly into the bottom of a greased 9×13-inch pan to form the crust.
  • Combine: 1 (29 oz) can pumpkin puree, 3 beaten eggs, 1 tsp ground cinnamon, 1/2 tsp ground ginger, 1/2 tsp pumpkin pie spice, 1/2 tsp salt, 1/4 tsp ground cloves, 1 cup sugar, and 1 (12 oz) can evaporated milk.
  • Mix until smooth, then pour the pumpkin filling over the prepared crust.
  • For the topping: combine the reserved 1 cup of cake mix with 3 tablespoons softened butter and 1/2 cup sugar. Mix until crumbly.
  • Sprinkle the crumb topping evenly over the pumpkin layer. Bake at 350°F (175°C) for 1 hour, or until the filling is set and the topping is golden. Serve warm with real whipped cream or a scoop of ice cream.
