- 6 oz (3/4 cup) cottage cheese
- 46 grams (3 tbsp) pumpkin puree
- 1 large egg
- 23 grams (3 tbsp) powdered sugar substitute (powdered monkfruit/allulose blend recommended)
- 1 tsp dry pumpkin spice seasoning, adjust to taste
- 1/4 tsp vanilla extract

Preheat the oven to 350°F (175°C). Lightly grease two 8-ounce oven-safe ramekins.

Place all ingredients in a food processor or blender and process for about 30 seconds, until the mixture is smooth and well combined. Divide the batter evenly between the prepared ramekins (about 8 tablespoons per ramekin).
