How to make Honey Lemon Buffalo Chicken Sandwiches
Start by seasoning 4 boneless, skinless chicken thighs or thin-cut chicken breasts with kosher salt, black pepper, and your preferred seasoning blend. Keep the seasoning simple so the honey, lemon, and buffalo flavors shine.
Preheat your grill, Blackstone griddle, or a large skillet over medium heat. If using a griddle or skillet, add a light coating of cooking oil; it’s not needed for a gas grill with proper heat.
Cook the chicken for about 10 minutes total, flipping a few times for even color and doneness. During the last half of cooking, brush on buffalo sauce, drizzle hot honey, and squeeze fresh lemon over both sides of the chicken for a bright, sweet-heat finish.

Finish each piece with a squeeze of lemon and a drizzle of hot honey to taste.

This chicken is substantial enough to be a meal on its own, but it makes a fantastic sandwich.

Near the end of cooking, add a slice of cheese to each chicken piece to melt—Colby Jack is used here, but cheddar, pepper jack, or your favorite melting cheese will work.
Toast the buns cut-side down for about a minute until lightly golden and warm.
