A classic, flavorful side dish that’s easy to make and loved by everyone.
Ingredients
- 5 large baked potatoes
- 1/4 cup butter
- 1/3 cup sour cream
- 1/3 cup Parmesan cheese
- 1/3 cup milk
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic salt
- 2 cups shredded Colby Jack cheese
- 2 green onions, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Cut the baked potatoes in half lengthwise.
- Carefully scoop out the potato flesh with a spoon and transfer it to a mixing bowl. Place the potato skins on a foil-lined baking sheet.
- Add the butter, sour cream, milk, salt, pepper, and garlic salt to the potato flesh. Beat or mash until smooth but not overworked, then stir in the Parmesan cheese.
- Spoon the potato mixture back into the skins, dividing evenly, and top each with shredded Colby Jack cheese.
- Bake for about 15 minutes at 375°F (190°C), or until the filling is heated through and the cheese is melted and bubbly.
- Garnish with chopped green onions and serve warm.
