Boredom is out — this dragon fruit and papaya salsa brings bright color and fresh flavor to any table. I used to be fine with jarred salsas, but once you make fresh salsa at home, you’ll see why it’s worth the extra few minutes.
Salsa is simple to prepare and highly adaptable. I like the striking look and sweet-tart flavor of purple dragon fruit, but a white variety works just as well in this recipe.

Seasonal fruit salsas are my favorite — the combination of dragon fruit and papaya is exotic yet easy to enjoy. This salsa pairs nicely with tortilla chips, and it also makes a bright condiment for tacos, grilled fish, burritos, or simply spooned over eggs.

Dragon Fruit Papaya Salsa Recipe
Ingredients:
1 cup dragon fruit, cubed
1 cup papaya, cubed
2 green onions, chopped
2 tablespoons lime juice
1 tablespoon fresh ginger, minced
Optional: chile powder to taste
Instructions:
Combine all ingredients gently in a bowl so the fruit keeps its shape. Chill the salsa for at least 15 minutes to allow the flavors to meld. Taste and adjust lime or chile powder as desired before serving.
