Instructions

  • Preheat oven to 400°F (200°C).
  • Rub the potato skins with ½ tablespoon olive oil.
  • Poke each potato a few times with a fork and place on a baking sheet lined with parchment or foil.

  • Stir in the bell peppers and sun-dried tomatoes and cook about 5 minutes.
  • Add the spinach and cook until wilted, then return the cooked chicken to the pan and combine.
  • Slice each baked sweet potato lengthwise (not all the way through) and gently open to create a pocket. Spoon the chicken and spinach mixture into each potato.
  • Top each stuffed potato with goat cheese and a sprinkle of fresh parsley. Serve immediately.
