This salad is an excellent choice for lunch, a starter, or a light dinner. It offers vibrant color, crunch, and a touch of sweetness, and it’s loaded with vitamins, fiber, minerals, antioxidants and protein—everything you need to feel satisfied and nourished.

I tend to eat mostly vegetable-based salads, often dressed lightly or combined with pasta. Still, sometimes I go through periods—often in summer, sometimes longer—when I crave very light meals and salads are all I want. In those moments I’ll make simple mixes of fresh vegetables. Siim, however, prefers protein in his meals, so I added chicken and lima beans to this salad to make it more filling.
I’m fairly new to using fresh lima beans in the kitchen. Do you cook with them? Siim usually boils them, drains the water, shells the pods and eats them plain. That’s fine, but I like to give them a little more flavor—sautéing them briefly in butter with a pinch of seasoning works well. If you have other easy ways to prepare fresh lima beans, I’d love to hear them.

Chicken Salad with Lima Beans, Beets & Spinach
Ingredients
- 4-5 Radishes
- 2 Beets
- 1 cup Fresh Lima Beans (100g)
- 4 cups Fresh Spinach
- 2 Chicken Breasts
- 1 can Sweetcorn
- 1-2 tbsp Unsalted Butter
- Salt & Pepper to taste

Wash the fresh lima beans and place them in a large pot of water. Bring to a boil, then reduce heat to medium-low and simmer until tender, about 30–40 minutes. Drain and cool before shelling the pods. You can cook the beans the night before to save time.

While the beans cook, wash and slice the radishes and spinach, then put them in a bowl. Wash, peel and slice the beets carefully—wear gloves or an apron if you want to avoid stains.

Cut the chicken into thin strips and season lightly with salt. Melt butter in a frying pan, add the chicken and fry until golden brown and cooked through.

Add the cooked lima beans and sweetcorn to the pan and sauté for another 2–3 minutes. Adjust seasoning with salt and pepper to taste.

Divide the spinach, radishes, beets, chicken, lima beans and sweetcorn among four plates and arrange as you like.

Serve warm or chilled, depending on your preference.
